Smoking the chipsSmoking meat is something which our ancestors developed thousands of years ago as a method of preserving and flavouring meat which otherwise would have gone off before it could have been eaten.



It would appear that as with most processes, it’s discovery was accidental. Early man would have dried meat as a method of preserving, it was found that meat hung in proximity to the fire, not only took on the flavour, but was better preserved than meat which has just been air dried. Further developments were made with the introduction of ‘curing’ using salt, although as the main aim was to preserve the meat, the quantities of salt used and the smoking times would have been excessive.
